Ingredients:
- 500 g portabello mushrooms
- 350 g macaroni or similar short pasta
- 500 g medium-fat cream cheese
- 2 tsp Dijon mustard
- 2 tsp onion powder
- 1 tsp garlic powder
- Pinch of nutmeg
- 1 fresh chives, minced
- 100 g cheddar cheese, grated
- 3 tbsp breadcrumbs
- Salt and pepper, to taste
- Fresh basil leaves, for serving
- 28×18 cm baking dish
Method:
- Preheat the oven to 200˚C with the fan on.
- Arrange portabello mushrooms on a large baking tray, season with salt and pepper, and roast in the oven for around 7 minutes until tender and juicy. Allow mushrooms to cool, drain excess liquid, and slice into large chunks.
- Cook the macaroni in a large pot of salted, boiling water until al dente. Reserve a cup of pasta cooking water and then drain the macaroni.
- While the macaroni cooks, combine cream cheese, cheddar, Dijon mustard, onion powder, garlic powder, and nutmeg in a saucepan over low heat.
