Do you have some chicken meat and you are wondering what special mean you can make? Well there is definitely plenty of dishes you can make using chicken. However, in the article we bring you our four favourite ways on turning your chicken meat into a delicious meal.
1. Chicken Leek And Mushroom Risotto
- Heat 1 tablespoon (15ml) each butter and canola oil in a large pot and fry 1 chopped onion. 4 Sliced leeks and 2 chopped garlic cloves until golden.
- Add 2 cups (500ml) Arborio rice and stir for 3 – 5 minutes.
- Add 4 cups (1L) chicken stock a little at a time until rice absorbs all liquid, stirring constantly
- Add 1 punnet (250g) sliced exotic or button mushrooms and cook for 5 minutes.
- Add ½ cup (125ml) cream, ½ shredded rotisserie chicken, ¼ cup (60ml) grated parmesan and heat through for 5 minutes
- Stir through 2 tablespoon (30ml) chopped chives and season.
- Serve immediately

2. Coconut Chicken Soup
- Heat 2 tablespoon (30ml) olive oil in a pot and fry 1 chopped onion, 2 chopped carrots and 1 deseeded and chopped red chilli until golden.
- Add 2 cups (500ml) chicken stock and simmer for 10 minutes
- Add 1 can (400ml) coconut cream, 1 shredded rotisserie chicken and simmer on a low heat for a further 5 – 7 minutes . Add 1 packet (300g) broccoli florets and 1 punnet (125g) sugar snap peas and simmer for 3 – 5 minutes.
- Season Garnish with chopped parsely (optional) and serve with crusty bread and croutons.

3. Easy Thai Green Curry
- Heat 2 tablespoon (30ml) coconut oil in a pot and fry 4 sliced spring onions, 2 chopped garlic cloves, 1cm knob peeled and chopped ginger, 1 chopped lemongrass stalk (optional) and 1 deseeded and chopped red chilli for 3 – 5 minutes
- Add 3 tablespoon (45ml) Thai green curry paste and fry for another 2 minutes
- Add 1 cup (250ml) chicken stock, 2 cans (400ml each) coconut milk and 1 rotisserie chicken and simmer for 10minutes
- Add juice (30ml) and grated peel of 1 lime or ½ lemon, season and simmer for a further 5 minutes.
- Garnish with chopped toasted cashew nuts (optional) and fresh basil and serve with naan, roti or rice
- Serves 4
4. BBQ Chicken and Blue Cheese Flatbreads
- Heat 2 tablespoons (30ml) canola oil in a pan and sauté 2 sliced red onions and 2 chopped garlic cloves for 3 – 5 minutes.
- Add ½ (about 450g) shredded rotiserrie chicken and 1 cup (250ml) barbeque sauce and heat through for 2 – 3 minutes.
- Season.
- Place 4 garlic naan breads onto a greased baking tray.
- Divide chicken mixture, 1 punnet (200g) halved cocktail tomatoes and 1 block (100g) crumbled blue cheese between naan breads.
- Bake at 200C for 15 minutes or until golden.
- Serve with rocket leaves (optional) and garnish with 2 tablespoon (30ml) chopped chives.
